Ingredients


2 oz Barbancourt 8 Year Rum
Juice of 1/2 Lime (a scant 1 oz)
1 tsp Bar Sugar (Superfine) (slightly heaping)

Instructions


Shake all ingredients over ice. Strain into a cocktail glass. Garnish with a lime twist.

Notes


Couple things about a Daiquiri...I like a rum with some body in my Daiquiris. So I use Barbancourt 8 Year. I'd use 15 Year, but the lime juice and sugar would cover it up too much. The 8 Year is perfect. The usual rum to use is white rum. If you use white rum, you may want to use a bit more sugar--white rum doesn't smooth out the lime juice quite as well as aged rum.

You have to use fresh squeeze lime juice. If you use Rose's Lime Juice or the stuff in the plastic squirt bottle, you'll have to choke it down.

Superfine sugar is a must, too. It will dissolve completely so all the sugar can counterbalance the lime juice. If you use granulated sugar, you'll leave half of it in the shaker, and you'll have a very tart Daiquiri.

Give this drink a try. I know almost all Daiquiris these days are frozen and have some fruit in them. But this is a very refreshing drink. It's also good for you low-carb people. Only 4 grams of carbs.
