Amazake

Amazake is a traditional Japanese non-alcoholic beverage made from sake kasu (sake lees) or koji (malted rice). Traditionally, amazake was well-known as a type of health supplement. Amazake was especially popular during the cold winter and hot summer months when proper nutrition is especially important to maintain health. Through analysis, it is now known that amazake does in fact contain a number of amino acids.

Today, amazake continues its popularity as a soothing, nostalgic beverage. Amazake is also a favorite during the traditional New Year's celebrations and Girl's Day Festival (Hinamatsuri).

Gekkeikan amazake is made with both sake kasu and koji. Served warmed or chilled, Gekkeikan amazake is a slightly sweet, creamy beverage perfect for on-the-go or when enjoying a relaxing break. Through analysis, it is now known that amazake does in fact contain a number of vitamins and amino acids.

Shochu

Shochu is a traditional Japanese distilled beverage which has steadily grown in popularity since the 1990s. Shochu is typically made from rice, wheat or potatoes and is enjoyed chilled, on the rocks or mixed with hot water.

At Gekkeikan, we produce the Bizan series of rice-based shochu and have developed a specialized production method based on low temperature fermentation, distillation and aging which results in a soft and fruity character.

Bizan Gold: Blend of oak barrel-aged shochu and fresh shochu. Rich in flavor and body.

Bizan Super: Sake kasu made from ginjo sake is added at the fermentation process. Complex flavor and softly refreshing taste.

Bizan Clear: Ginjo sake kasu is added at the fermentation process to create a light, easy-to-drink shochu.

Mirin

Mirin is a traditional seasoning agent unique to Japanese cuisine. Versatile and easy to use, mirin is prized by both professional chefs as well as Japanese households for its ability to enhance flavor.

Gekkeikan mirin is a fermented product made from mochigome (sweet rice), koji, alcohol and sugar. Gekkeikan mirin enhances the flavor of cooking ingredients while giving a mildly sweet character to create a satisfying balance.
